Alcohol dehydrogenase / ADH

alcohol dehydrogenase – aka ADH, an enzyme found in the liver and stomach, where it breaks down alcohol (and without which its consumption would not be possible). Lower levels occur in people of Asian descent and this is thought to be responsible for their higher levels of alcohol intolerance and ‘Asian flush’. Lower levels also occur in women generally, but especially those from Essex.
